  • 1 tablespoon olive oil
  • 1/4 cup chopped red bell pepper
  • 1/4 cup chopped zucchini
  • 1/4 cup crumbled feta cheese
  • 1 tablespoon chopped Kalamata olives
  • 1/4 teaspoon dried oregano
  • to taste Salt and pepper

Method
 

  1. Whisk eggs with salt, pepper, and oregano.
  2. Heat olive oil in a non-stick skillet over medium heat.
  3. Add bell pepper and zucchini and cook until softened, 3-5 minutes.
  4. Pour in the whisked eggs.
  5. Cook, stirring occasionally, until eggs are set but slightly moist.
  6. Stir in feta cheese and Kalamata olives.
  7. Serve immediately.

Feel free to add other vegetables like spinach or mushrooms!
