Method
- Whisk eggs with salt, pepper, and oregano.
- Heat olive oil in a non-stick skillet over medium heat.
- Add bell pepper and zucchini and cook until softened, 3-5 minutes.
- Pour in the whisked eggs.
- Cook, stirring occasionally, until eggs are set but slightly moist.
- Stir in feta cheese and Kalamata olives.
