Method
- Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery and cook until softened, about 5-7 minutes.
- Add garlic, oregano, and red pepper flakes (if using) and cook for 1 minute more.
- Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 10 minutes.
- Add cannellini beans and simmer for another 5 minutes.
- Stir in parsley and lemon juice. Season with salt and pepper to taste.
- Serve hot with your favorite toppings.
Notes
For a richer flavor, use homemade vegetable broth. You can also add other vegetables like zucchini or spinach.
