  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 0.5 teaspoon red pepper flakes (optional)
  • 6 cups vegetable broth
  • 2 (15-ounce) cans cannellini beans, rinsed and drained
  • 0.5 cup chopped fresh parsley
  • 0.25 cup lemon juice
  • Salt and pepper to taste
  • Optional toppings: crusty bread, drizzle of olive oil, grated Parmesan cheese

Method
 

  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery and cook until softened, about 5-7 minutes.
  2. Add garlic, oregano, and red pepper flakes (if using) and cook for 1 minute more.
  3. Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 10 minutes.
  4. Add cannellini beans and simmer for another 5 minutes.
  5. Stir in parsley and lemon juice. Season with salt and pepper to taste.
  6. Serve hot with your favorite toppings.

Notes

For a richer flavor, use homemade vegetable broth. You can also add other vegetables like zucchini or spinach.
