  • 1 pound ground beef
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 15 ounce can tomato sauce
  • 10 ounce can diced tomatoes and green chilies, undrained
  • 1.25 ounce package taco seasoning
  • 1 cup cooked rice
  • 1 cup shredded cheddar cheese
  • Optional toppings: sour cream, salsa, guacamole

Method
 

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Brown ground beef in a skillet; drain grease.
  3. Stir in onion and bell pepper; cook until softened (5 min).
  4. Add tomato sauce, diced tomatoes, chilies, and taco seasoning. Simmer for 10 minutes.
  5. Stir in cooked rice.
  6. Pour into a greased baking dish.
  7. Top with cheddar cheese.
  8. Bake for 20-25 minutes, until cheese is melted.
  9. Let stand for 5-10 minutes before serving. Add toppings.

Notes

For a spicier casserole, use hot taco seasoning or add a pinch of cayenne pepper.
