Method
- Preheat oven to 350°F (175°C).
- Heat olive oil in a skillet, add onion and garlic, cook until translucent (3-4 minutes).
- Add ground beef, cook until browned (5-7 minutes), drain fat.
- Stir in taco seasoning, black beans, corn, diced tomatoes, and rice. Season with salt and pepper.
- Pour half the salsa in a baking dish, add beef mixture, top with remaining salsa and cheese.
- Cover and bake for 20 minutes, remove foil and bake 10-15 minutes until cheese is bubbly.
- Cool slightly, garnish with cilantro if desired, and serve.
Notes
Adjust the amount of taco seasoning and salsa to your preferred level of spiciness.
