  • 2 cups cooked rice
  • 1 pound ground beef
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 15 ounces black beans, rinsed and drained canned
  • 15 ounces corn, drained canned
  • 10 ounces diced tomatoes with green chilies canned
  • 1 tablespoon taco seasoning
  • 1 cup shredded cheddar cheese
  • 1 cup salsa
  • 1 tablespoon olive oil
  • to taste Salt and pepper
  • for garnish Fresh cilantro optional

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Heat olive oil in a skillet, add onion and garlic, cook until translucent (3-4 minutes).
  3. Add ground beef, cook until browned (5-7 minutes), drain fat.
  4. Stir in taco seasoning, black beans, corn, diced tomatoes, and rice. Season with salt and pepper.
  5. Pour half the salsa in a baking dish, add beef mixture, top with remaining salsa and cheese.
  6. Cover and bake for 20 minutes, remove foil and bake 10-15 minutes until cheese is bubbly.
  7. Cool slightly, garnish with cilantro if desired, and serve.

Notes

Adjust the amount of taco seasoning and salsa to your preferred level of spiciness.
