Mexican Chicken & Rice Casserole

Ingredients
  

Main ingredients
  • 2 cups cooked rice
  • 1 lb cooked chicken, shredded
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 1 cup shredded cheddar cheese
  • 1 tablespoon taco seasoning
  • 1 cup chicken broth
  • to taste Salt and pepper
  • for garnish Fresh cilantro optional

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Mix rice, chicken, beans, corn, tomatoes, taco seasoning, and broth in a bowl.
  3. Season with salt and pepper, then transfer to a greased casserole dish.
  4. Top with shredded cheese, cover, and bake for 25 minutes.
  5. Remove foil, bake 10-15 minutes until bubbly and golden, then garnish with cilantro if desired.

Notes

You can customize the spice level by adjusting the taco seasoning.
