Ingredients
  

Rice and Beans
  • 2 cups cooked rice
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • to taste Salt and pepper
  • 0.5 cup chopped onions
  • 0.5 cup chopped bell pepper
  • 1 tablespoon olive oil
Garnish
  • to taste Fresh cilantro for garnish (optional)

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Sauté onions and bell pepper in olive oil until softened.
  3. Mix rice, beans, corn, tomatoes, sautéed vegetables, spices, salt, and pepper in a bowl.
  4. Transfer to a greased casserole dish, top with cheese, and bake covered for 25 minutes.
  5. Remove foil, bake 10 more minutes until bubbly, garnish with cilantro, and serve.

Notes

You can customize the spice level by adjusting chili powder and adding hot sauce.
