Method
- Preheat oven to 350°F (175°C).
- Sauté onions and bell pepper in olive oil until softened.
- Mix rice, beans, corn, tomatoes, sautéed vegetables, spices, salt, and pepper in a bowl.
- Transfer to a greased casserole dish, top with cheese, and bake covered for 25 minutes.
- Remove foil, bake 10 more minutes until bubbly, garnish with cilantro, and serve.
Notes
You can customize the spice level by adjusting chili powder and adding hot sauce.
