Method
- Preheat oven to 375°F (190°C). Spray mini muffin pan.
- Mix pancake mix, water, and vanilla until just combined.
- Fill muffin tins 3/4 full with batter.
- Add desired toppings on each batter-filled cup.
- Bake for 12-15 minutes until golden brown.
- Cool on a rack before storing.
