Dry Ingredients
  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 3/4 cup cocoa powder (Dutch processed or natural unsweetened)
  • 2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon fine sea salt
  • 3/4 cup whole milk
  • 1/2 cup vegetable oil
  • 1/4 cup full-fat sour cream
  • 2 large eggs (lightly beaten)
  • 2 teaspoons vanilla extract
  • 1 cup hot coffee
  • 1 cup Chocolate Ganache Buttercream Frosting (or other frosting of your choosing)

Method
 

  1. Preheat oven to 350°F (175°C). Grease two 9-inch round cake pans and line the bottoms with parchment paper.
  2. In a large mixing bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add milk, vegetable oil, sour cream, eggs, and vanilla extract. Mix until well combined.
  4. Stir in hot coffee until the batter is smooth. The batter will be thin.
  5. Divide batter evenly between prepared pans. Bake for 35 minutes or until a toothpick inserted in the center comes out clean.
  6. Let cool in pans for 10 minutes, then transfer to a wire rack to cool completely before frosting.

Notes

For a deeper chocolate flavor, use Dutch-processed cocoa powder. Allow the cake to cool completely before frosting for best results.
