Ingredients
  

Dry ingredients
  • 1 ¾ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • 1 ½ tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ¼ tsp ground cloves
Wet ingredients
  • 1 cup canned pumpkin puree
  • ¾ cup brown sugar
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
Optional nuts
  • ½ cup chopped walnuts or pecans optional

Method
 

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
  2. Mix dry ingredients in a bowl. In another bowl, combine pumpkin, sugar, oil, eggs, and vanilla.
  3. Combine wet and dry ingredients; fold in nuts if using. Pour into pan.
  4. Bake for 55-65 minutes until a toothpick comes out clean.
  5. Cool in pan for 10 minutes, then transfer to wire rack to cool completely.

Notes

For extra flavor, add a teaspoon of ginger or a dash of allspice.
