Ingredients
  

Dry ingredients
  • 2 1/2 cups pancake mix
  • 1/3 cup granulated sugar
Wet ingredients
  • 2 large eggs
  • 3/4 cup milk
  • 1/4 cup vegetable oil
Add-ins
  • 1 cup fresh blueberries or other mix-ins

Method
 

  1. Preheat oven to 375°F (190°C) and prepare muffin tin.
  2. Mix pancake mix and sugar in a bowl.
  3. Whisk eggs, milk, and oil in a separate bowl.
  4. Combine wet and dry ingredients, fold in blueberries.
  5. Fill muffin cups 2/3 full and bake for 15-18 minutes.

Notes

Do not over-mix for tender muffins.
