Method
- Preheat oven to 375°F (190°C) and prepare muffin tin.
- Mix pancake mix and sugar in a bowl.
- Whisk eggs, milk, and oil in a separate bowl.
- Combine wet and dry ingredients, fold in blueberries.
- Fill muffin cups 2/3 full and bake for 15-18 minutes.
Notes
Do not over-mix for tender muffins.
