  • 0.5 cup unsalted butter cut into tablespoon pieces
  • 2 cups granulated sugar
  • 0.25 cup unsweetened cocoa powder
  • 0.5 cup creamy peanut butter
  • 2 teaspoons pure vanilla extract
  • 0.5 teaspoon kosher salt
  • 3 cups quick oats

Method
 

  1. Line baking sheets with parchment or silicone mats.
  2. Combine butter, sugar, milk, and cocoa in a saucepan; bring to a boil for 1 minute.
  3. Remove from heat; stir in peanut butter, vanilla, salt, then oats.
  4. Drop spoonfuls onto sheets; let cool until hardened, about 20-30 minutes.
