Ingredients
  

  • 8 ounces cream cheese softened
  • 0.5 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon rosewater adjust to taste
  • 1 cup heavy whipping cream very cold
  • 1 cup fresh strawberries hulled and sliced
  • 0.5 cup fresh raspberries
  • 6-8 ladyfingers OR 1 cup crushed digestive biscuits
  • a few drops pink food coloring Optional

Method
 

  1. In a large bowl, beat softened cream cheese with granulated sugar, vanilla extract, and rosewater until smooth. Optionally, add a few drops of pink food coloring for a delicate hue.
  2. In a separate, chilled bowl, whip the very cold heavy cream until stiff peaks form.
  3. Gently fold the whipped cream into the cream cheese mixture until just combined, being careful not to deflate.
  4. Arrange a layer of ladyfingers at the bottom of individual serving glasses or a small trifle dish. Alternatively, press crushed digestive biscuits evenly into the bottom to form a base.
  5. Spoon half of the prepared cream cheese mixture over the base.
  6. Arrange half of the sliced strawberries and raspberries over the cream layer.
  7. Repeat with the remaining cream cheese mixture, followed by the remaining fresh berries.
  8. Cover and chill in the refrigerator for at least 2-4 hours, or until well set and firm.
  9. Serve cold, garnished with an extra berry or an edible flower petal for elegance.

Notes

For best results, ensure your cream cheese is fully softened and your heavy cream is very cold before whipping to achieve the perfect creamy texture.
