Ingredients

  • 2 medium eggplants sliced
  • 1 cup tomato sauce
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • to taste salt and pepper

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Slice eggplants and brush with olive oil, then bake for 15 minutes.
  3. In a skillet, sauté garlic in olive oil until fragrant, then add tomato sauce, salt, and pepper.
  4. Layer eggplant slices in a baking dish, cover with sauce, and sprinkle cheese on top.
  5. Bake for 30 minutes until bubbly and golden.

Notes

You can add herbs like basil or oregano for extra flavor.
