Ingredients
  

Dough
  • 1 cup all-purpose flour see note
  • 1 teaspoon cinnamon
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon table salt
  • 14 Tablespoons butter at room temperature (1 and 3/4 sticks)
  • 1 cup granulated sugar
  • 1/4 cup light brown sugar packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 1/2 cups old-fashioned rolled oats

Method
 

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Mix flour, cinnamon, baking powder, baking soda, and salt in a bowl.
  3. Cream butter, granulated sugar, and brown sugar until fluffy. Add egg and vanilla, mix well.
  4. Gradually add dry ingredients, then stir in oats. Scoop dough onto baking sheets and flatten slightly.
  5. Bake for 12-15 minutes until golden. Cool on sheets before transferring.

Notes

For softer cookies, slightly underbake and cool on sheets.
