  • 1.5 lbs boneless, skinless chicken thighs cut into 1-inch pieces
  • 1 red bell pepper chopped
  • 1 yellow bell pepper chopped
  • 1 red onion chopped
  • 1 pint cherry tomatoes halved
  • 1 zucchini chopped
  • 1/2 cup Kalamata olives pitted and halved
  • 1/4 cup olive oil
  • 2 cloves garlic minced
  • 2 tablespoons lemon juice
  • 1 tablespoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup crumbled feta cheese optional
  • Fresh parsley chopped (for garnish)

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Combine chicken, bell peppers, red onion, cherry tomatoes, zucchini, and olives in a bowl.
  3. Whisk olive oil, garlic, lemon juice, oregano, basil, salt, and pepper in a small bowl.
  4. Pour dressing over chicken and vegetables; toss to coat.
  5. Spread mixture on a baking sheet in a single layer.
  6. Bake for 25-30 minutes, until chicken is cooked and vegetables are tender.
  7. Sprinkle with feta cheese and parsley before serving (optional).

Notes

For extra flavor, marinate the chicken for at least 30 minutes before cooking.
