- Preheat oven to 200°C (392°F).
- Cut cauliflower and broccoli into florets; blanch optionally.
- Slice potatoes and carrots thinly; cut red pepper into strips.
- Arrange vegetables on a baking tray in a single layer.
- Mix olive oil, garlic, spices, and salt to create the sauce.
- Pour sauce over vegetables and toss to coat.
- Roast for 40 minutes, stirring halfway through.
- Prepare garlic yogurt by mixing yogurt with minced garlic and salt.
- Remove vegetables from oven when tender and caramelized.
- Serve roasted vegetables with garlic yogurt on the side.
Notes
For extra flavor, add a squeeze of lemon juice after roasting.
