Ingredients
  

Vegetables
  • 1 whole cauliflower
  • 1 whole broccoli
  • 3 medium potatoes
  • 1 red bell pepper
  • 2 large carrots
Seasoning
  • 70 ml olive oil
  • 3 cloves garlic, grated
  • 1 small teaspoon black pepper
  • 1 small teaspoon dried thyme
  • 1 small teaspoon curry powder
  • 0.5 teaspoon red pepper flakes
  • 0.5 teaspoon chili powder
  • to taste Salt

Method
 

  1. Preheat oven to 200°C (392°F).
  2. Cut cauliflower and broccoli into florets; blanch optionally.
  3. Slice potatoes and carrots thinly; cut red pepper into strips.
  4. Arrange vegetables on a baking tray in a single layer.
  5. Mix olive oil, garlic, spices, and salt to create the sauce.
  6. Pour sauce over vegetables and toss to coat.
  7. Roast for 40 minutes, stirring halfway through.
  8. Prepare garlic yogurt by mixing yogurt with minced garlic and salt.
  9. Remove vegetables from oven when tender and caramelized.
  10. Serve roasted vegetables with garlic yogurt on the side.

Notes

For extra flavor, add a squeeze of lemon juice after roasting.
