Ingredients
  

Wet Ingredients
  • 2 pieces eggs
  • 2 cups buttermilk
  • 4 tablespoons butter (melted)
  • 1/2 teaspoon vanilla extract
Dry Ingredients
  • 2 cups flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon coarse kosher salt
Add-Ins
  • Add-Ins Optional mix-ins like berries, chocolate chips, nuts

Method
 

  1. Preheat oven to 350°F (175°C). Coat muffin tins with cooking spray.
  2. Whisk eggs, buttermilk, melted butter, and vanilla in a bowl.
  3. Mix dry ingredients separately, then combine with wet ingredients. Do not overmix.
  4. Divide batter into muffin tins, add optional mix-ins on top.
  5. Bake for 15-18 minutes until edges are golden. Serve warm.

Notes

For extra flavor, add berries or chocolate chips before baking.
