Ingredients
  

Pancake Mix
  • 2.5 cups pancake mix (or Bisquick)
  • 2 eggs eggs
  • 0.33 cup honey (or maple syrup)
  • 0.5 cup milk
  • 0.25 cup vegetable oil

Method
 

  1. Preheat oven to 375°F. Spray muffin pan with non-stick spray or line with liners.
  2. Mix pancake mix, eggs, honey, milk, and oil until just combined.
  3. Divide batter into muffin cups about ¾ full. Add optional mix-ins if desired.
  4. Bake for 12-15 minutes until golden and a toothpick comes out clean.

Notes

Feel free to add berries, chocolate chips, or nuts for extra flavor.
