Ingredients
  

Dry ingredients
  • 1.5 cups farina 00 or all-purpose flour
  • 3.5 teaspoons lievito in polvere per dolci baking powder
  • 1 teaspoon sale fino
  • 1 tablespoon zucchero semolato
Wet ingredients
  • 1.25 cups latte intero or plant-based beverage
  • 1 piece uovo grande at room temperature
  • 3 tablespoons burro fuso cooled, or vegetable oil
  • 1 teaspoon estratto di vaniglia
For greasing
  • as needed burro o olio vegetale for greasing the pan

Method
 

  1. In a large bowl, sift together flour, baking powder, salt, and sugar. Mix well.
  2. In a separate bowl, whisk together milk, egg, melted butter, and vanilla.
  3. Pour wet ingredients into dry ingredients and stir just until combined; some lumps are okay.
  4. Heat a non-stick skillet over medium heat and lightly grease with butter or oil.
  5. Pour 1/4 cup batter for each pancake; cook 2-3 minutes until bubbles form, then flip and cook another minute until golden.
  6. Serve warm with your favorite toppings.

Notes

For fluffier pancakes, let the batter rest for a few minutes before cooking.
