Method
- In a large bowl, sift together flour, baking powder, salt, and sugar. Mix well.
- In a separate bowl, whisk together milk, egg, melted butter, and vanilla.
- Pour wet ingredients into dry ingredients and stir just until combined; some lumps are okay.
- Heat a non-stick skillet over medium heat and lightly grease with butter or oil.
- Pour 1/4 cup batter for each pancake; cook 2-3 minutes until bubbles form, then flip and cook another minute until golden.
- Serve warm with your favorite toppings.
Notes
For fluffier pancakes, let the batter rest for a few minutes before cooking.
