Ingredients
  

Pasta
  • 2 cups uncooked pasta (fusilli, penne, or rotini)
  • 1 cup cherry tomatoes, halved
  • 1 cup bell peppers, diced (red, yellow, or green)
  • 1 cup cucumber, diced
  • 0.5 cup red onion, finely chopped
  • 1 cup black olives, sliced
  • 1 cup mozzarella cheese, cubed or shredded
  • 0.5 cup Italian dressing (store-bought or homemade)
  • 0.5 teaspoon dried oregano

Method
 

  1. Cook pasta in salted boiling water until al dente, then drain and rinse with cold water.
  2. Chop cherry tomatoes, bell peppers, cucumber, and red onion into bite-sized pieces.
  3. Combine cooked pasta, chopped vegetables, olives, and cheese in a large bowl.
  4. Whisk together dressing, oregano, salt, and pepper; pour over the salad and toss to coat.
