Method
- Mix dry ingredients in a bowl and set aside.
- Whisk egg, milk, vanilla, and melted butter until combined.
- Pour wet mixture into dry ingredients and gently fold until smooth.
- Let batter rest for 10 minutes to thicken.
- Heat a greased pan and pour 1/4 cup batter for each pancake. Cook until golden, then flip and cook the other side.
- Serve hot with toppings of your choice.
Notes
For fluffier pancakes, do not overmix the batter.
