Ingredients
  

  • 1 cup mashed ripe bananas about 2-3 bananas
  • 1 cup canned pumpkin puree
  • 2 large eggs
  • 1/2 cup melted butter or coconut oil
  • 3/4 cup brown sugar
  • 1/4 cup maple syrup
  • 1 3/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 1/2 tsp ground cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp ground cloves
  • 1 tsp vanilla extract
  • 1/2 cup chopped walnuts or chocolate chips optional

Method
 

  1. Preheat oven to 350°F (175°C). Grease and line a loaf pan.
  2. Mash bananas in a large bowl, then stir in pumpkin, eggs, butter, brown sugar, maple syrup, and vanilla until smooth.
  3. Whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves in another bowl.
  4. Gently fold dry ingredients into wet mixture. Do not overmix. Stir in optional walnuts or chocolate chips if using.
  5. Pour batter into prepared loaf pan and smooth the top. Bake for 55–65 minutes, or until a toothpick inserted comes out clean.
  6. Let cool in pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

For an extra moist bread, store it in an airtight container at room temperature for up to 5 days.
