Ingredients
  

Dry ingredients
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
Wet ingredients
  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 cup canned pumpkin puree
  • 1/4 cup water
  • 1/2 teaspoon vanilla extract

Method
 

  1. Preheat oven to 350°F (175°C). Grease a loaf pan.
  2. Mix dry ingredients in a bowl.
  3. Combine sugar and oil, then add eggs, pumpkin, water, and vanilla.
  4. Mix wet and dry ingredients until just combined.
  5. Pour batter into pan and bake 60-70 minutes.
  6. Cool before slicing.

Notes

For best results, do not overmix the batter.
