  • 1/2 cup vegetable oil
  • 2 large eggs
Dry ingredients
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

Method
 

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. Mix pumpkin, sugar, oil, and eggs until combined.
  3. Whisk dry ingredients together, then add to wet mixture.
  4. Stir in vanilla, pour batter into pan.
  5. Bake for 60-70 minutes, cool before serving.
