Ingredients
  

Dry Ingredients
  • 1 2/3 cups All Purpose Flour
  • 1 1/4 cups granulated sugar
  • 2 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp nutmeg
  • 1/4 tsp kosher salt
Wet Ingredients
  • 1 1/4 cups granulated sugar
  • 1 cup pumpkin puree not pumpkin pie puree
  • 1/2 cup softened unsalted butter
  • 1/2 cup warm milk microwave for about 30 seconds
  • 2 large eggs room temperature

Method
 

  1. Preheat oven to 350°F (175°C). Grease and flour your pan.
  2. Mix dry ingredients in one bowl. Cream butter and sugar, then add eggs, pumpkin, vanilla. Combine with dry ingredients and milk.
  3. Pour batter into prepared pan and bake for 45-55 minutes until a toothpick comes out clean.
  4. Cool for 15 minutes, then invert and cool completely before serving.

Notes

Do not overbake; a few crumbs on the toothpick are okay.
