Method
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken pieces and cook until browned and cooked through (5-7 minutes). Season with salt and pepper.
- Add red bell pepper and red onion to the skillet. Cook until softened, about 3-5 minutes.
- Stir in diced tomatoes, Kalamata olives, garlic, oregano, and basil. Simmer for 5 minutes.
- Remove from heat and stir in feta cheese.
- Garnish with fresh parsley (optional) and serve hot with rice, quinoa, or couscous.
