  • 1.5 lbs boneless, skinless chicken breasts cut into 1-inch pieces
  • 1 tbsp olive oil
  • 1 red bell pepper chopped
  • 1/2 red onion chopped
  • 14.5 oz canned diced tomatoes undrained
  • 1/2 cup Kalamata olives pitted and halved
  • 1/4 cup crumbled feta cheese
  • 2 cloves garlic minced
  • 1 tbsp dried oregano
  • 1 tsp dried basil
  • to taste Salt and pepper
  • Optional Fresh parsley chopped, for garnish

Method
 

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add chicken pieces and cook until browned and cooked through (5-7 minutes). Season with salt and pepper.
  3. Add red bell pepper and red onion to the skillet. Cook until softened, about 3-5 minutes.
  4. Stir in diced tomatoes, Kalamata olives, garlic, oregano, and basil. Simmer for 5 minutes.
  5. Remove from heat and stir in feta cheese.
  6. Garnish with fresh parsley (optional) and serve hot with rice, quinoa, or couscous.

Serve with a side of whole-wheat couscous or quinoa for a complete and balanced meal.
