Method
- Cook the pasta in salted boiling water until al dente. Drain and rinse under cold water.
- Slice the cucumber, tomatoes, and red onion. Halve the olives.
- Combine pasta, vegetables, olives, mozzarella, and parsley in a large bowl.
- Pour in Italian dressing and toss to coat. Season with salt and pepper.
- Chill for 20–30 minutes before serving.
Notes
For extra flavor, add fresh basil or a squeeze of lemon before serving.
