Ingredients
  

Pasta
  • 3 cups cooked rotini pasta
Vegetables
  • 1 cup cherry tomatoes halved
  • 1 cucumber sliced
  • 1/2 red onion thinly sliced
Olives
  • 1/2 cup Kalamata olives halved
Cheese
  • 1 cup mozzarella pearls
Herbs
  • 1/4 cup chopped parsley
Dressing
  • 3/4 cup Italian dressing
Seasoning
  • to taste Salt and pepper

Method
 

  1. Cook the pasta in salted boiling water until al dente. Drain and rinse under cold water.
  2. Slice the cucumber, tomatoes, and red onion. Halve the olives.
  3. Combine pasta, vegetables, olives, mozzarella, and parsley in a large bowl.
  4. Pour in Italian dressing and toss to coat. Season with salt and pepper.
  5. Chill for 20–30 minutes before serving.

Notes

For extra flavor, add fresh basil or a squeeze of lemon before serving.
