Ingredients
  

Marinade
  • 0.5 cup ranch dressing store-bought or homemade
  • 0.25 cup parmesan cheese grated
  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • 1 teaspoon dried parsley or fresh, chopped
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon garlic powder
  • 1 teaspoon lemon juice optional
  • 1.5 lbs boneless, skinless chicken breasts or thighs cut into 1-inch cubes
Skewers
  • 1 unit wooden or metal skewers

Method
 

  1. Mix ranch, parmesan, olive oil, garlic, parsley, black pepper, garlic powder, and lemon juice to make marinade.
  2. Marinate chicken in mixture for at least 30 minutes, up to 2 hours.
  3. Thread chicken onto skewers; soak wooden skewers in water if using.
  4. Preheat grill to medium-high. Grill skewers 10-15 minutes, turning occasionally, until cooked through.
  5. Rest skewers briefly, then serve garnished with parsley or parmesan.

Notes

Soaking wooden skewers prevents burning. Adjust marinating time for more flavor.
