Ingredients
  

Salmon
  • 4 pieces salmon fillets about 6 oz each
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 3 cloves garlic, minced
  • 2 cups fresh spinach baby spinach works best
  • 1 cup heavy cream or half and half for a lighter version
  • ½ cup grated parmesan cheese
  • 1 teaspoon dijon mustard optional, for depth
  • ¼ teaspoon red pepper flakes optional, for heat
  • 1 teaspoon fresh lemon juice about 1 teaspoon to brighten

Method
 

  1. Season the salmon with salt and pepper. Sear in a skillet with olive oil and butter until golden and cooked through, about 4–5 minutes per side. Remove and set aside.
  2. In the same skillet, sauté garlic until fragrant, then add spinach and cook until wilted, about 2 minutes.
  3. Reduce heat and stir in heavy cream, Parmesan, Dijon mustard, and red pepper flakes. Simmer until sauce thickens, 3–4 minutes. Add lemon juice, salt, and pepper to taste.
  4. Return salmon to the skillet, spoon sauce over, and simmer for 2–3 minutes. Serve with pasta, rice, or bread.

Notes

For a lighter version, use half and half instead of heavy cream.
