Method
- Season the salmon with salt and pepper. Sear in a skillet with olive oil and butter until golden and cooked through, about 4–5 minutes per side. Remove and set aside.
- In the same skillet, sauté garlic until fragrant, then add spinach and cook until wilted, about 2 minutes.
- Reduce heat and stir in heavy cream, Parmesan, Dijon mustard, and red pepper flakes. Simmer until sauce thickens, 3–4 minutes. Add lemon juice, salt, and pepper to taste.
- Return salmon to the skillet, spoon sauce over, and simmer for 2–3 minutes. Serve with pasta, rice, or bread.
Notes
For a lighter version, use half and half instead of heavy cream.
