- Preheat oven to 375°F (190°C). Slice eggplants, salt, sit for 20 mins, rinse, and dry.
- Heat olive oil, sauté eggplant slices until golden, 5-7 mins per side.
- Spread marinara in a baking dish, layer half of eggplants, seasonings, crackers, and cheese. Repeat layers, top with Parmesan.
- Cover with foil, bake 25 mins. Remove foil, bake 10-15 mins until bubbly and golden.
- Let cool briefly before serving.
Notes
For extra flavor, sprinkle fresh herbs before serving.
