Ingredients
  

Eggplant
  • 2 medium eggplants, sliced sliced
  • 1 cup Ritz crackers, crushed
  • 1 cup shredded mozzarella cheese
  • 1 cup marinara sauce
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper
  • Olive oil for drizzling Olive oil for sautéing and drizzling

Method
 

  1. Preheat oven to 375°F (190°C). Slice eggplants, salt, sit for 20 mins, rinse, and dry.
  2. Heat olive oil, sauté eggplant slices until golden, 5-7 mins per side.
  3. Spread marinara in a baking dish, layer half of eggplants, seasonings, crackers, and cheese. Repeat layers, top with Parmesan.
  4. Cover with foil, bake 25 mins. Remove foil, bake 10-15 mins until bubbly and golden.
  5. Let cool briefly before serving.

Notes

For extra flavor, sprinkle fresh herbs before serving.
