  • 1 medium spaghetti squash
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Cut the spaghetti squash in half lengthwise.
  3. Remove the seeds from each half.
  4. Drizzle with olive oil and season with salt and pepper.
  5. Place squash cut-side down on a baking sheet.
  6. Roast for 40-60 minutes, until easily pierced with a fork.
  7. Let cool slightly, then scrape the flesh into strands.
  8. Serve as a side dish or in pasta recipes.

Notes

For a richer flavor, try adding a sprinkle of Parmesan cheese after roasting.
