Method
- Preheat oven to 400°F (200°C).
- Cut the spaghetti squash in half lengthwise.
- Remove the seeds from each half.
- Drizzle with olive oil and season with salt and pepper.
- Place squash cut-side down on a baking sheet.
- Roast for 40-60 minutes, until easily pierced with a fork.
- Let cool slightly, then scrape the flesh into strands.
- Serve as a side dish or in pasta recipes.
Notes
For a richer flavor, try adding a sprinkle of Parmesan cheese after roasting.
