Ingredients
  

Sweet Potatoes
  • 3 large sweet potatoes baked and mashed
  • 0.5 cup granulated sugar
Next 6 ingredients
  • 1 tsp rosemary chopped
  • 1 tsp sage chopped
  • 1 cup cornflakes cereal
  • 1/2 cup butter melted
  • 1 cup next 3 ingredients sugar, cinnamon, nutmeg
  • 2 cups marshmallows

Method
 

  1. Preheat oven to 400°. Bake sweet potatoes for 1 hour, then peel and mash.
  2. Reduce oven to 350°. Mix mashed sweet potatoes with sugar, rosemary, sage, and spices. Pour into a greased baking dish.
  3. Combine cornflakes and melted butter; sprinkle over the casserole.
  4. Bake at 350° for 30 minutes. Top with marshmallows and bake 10 more minutes.

Notes

For extra flavor, sprinkle fresh herbs before serving.
