Ingredients
  

Vegetables
  • 4 medium zucchinis, sliced
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
Cheese
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
Meat & Dairy
  • 1/2 cup cooked and crumbled turkey bacon (optional)
  • 1/2 cup sour cream or Greek yogurt
  • 1/4 cup mayonnaise
Breadcrumbs & Seasonings
  • 1/4 cup breadcrumbs
  • 2 tablespoons olive oil
  • 1 teaspoon dried Italian seasoning
  • to taste Salt and pepper

Method
 

  1. Preheat oven to 375°F (190°C) and grease a 9×13 inch dish.
  2. Sauté onion and garlic in olive oil until translucent and fragrant.
  3. Add zucchini slices; cook until tender, season with Italian seasoning, salt, and pepper.
  4. Mix zucchini, tomatoes, cheeses, bacon, and sour cream in a bowl. Transfer to dish.
  5. Top with breadcrumbs and Parmesan, then bake for 20-25 minutes until golden.

Notes

For extra flavor, sprinkle fresh parsley before serving.
