Ingredients
  

Salmon
  • 4 fillets salmon fillets (6-8 ounces each), skin-on or skinless
  • to taste salt and black pepper
  • 2 tablespoons olive oil
  • 1 teaspoon paprika (optional)
  • 4 cloves garlic, minced
  • 0.25 cup fresh lemon juice (about 2 lemons)
  • zest of 1 lemon lemon zest
  • 0.5 cup unsalted butter
  • 2 tablespoons fresh parsley, chopped
  • to taste salt and black pepper

Method
 

  1. Pat dry salmon, season with salt, pepper, and paprika.
  2. Heat olive oil in skillet, sear salmon 3-4 min per side until golden.
  3. Transfer to oven at 375°F (190°C), roast 10-12 min until flaky.
  4. Make sauce: melt butter, sauté garlic 1-2 min, add lemon juice and zest, simmer 2-3 min.
  5. Pour sauce over cooked salmon, garnish with parsley, serve immediately.

Notes

For extra flavor, add a pinch of red pepper flakes to the sauce.
