  • 2 cups shredded rotisserie chicken
Vegetables & Aromatics
  • 1 cup yellow onion, diced
  • 3 cloves garlic, minced
Pan & Cooking
  • 1 tbsp extra virgin olive oil
  • 15.5 oz salsa verde
  • 1 can (4oz) diced green chiles
  • 1 cup white long grain rice
  • 2 cups chicken broth
  • 1 cup shredded monterey jack cheese
  • 1 can (4oz) black beans, rinsed and drained
  • 0.5 cup roasted corn
  • 1 tsp chili powder
  • 1 tsp sea salt
  • 0.5 tsp cumin
  • 0.5 tsp garlic powder
  • dash black pepper black pepper
  • 3 tbsp cilantro
Optional toppings
  • 1 avocado avocado sliced
  • Red pepper flakes red pepper flakes to taste

Method
 

  1. Heat olive oil in a pan over medium heat, then sauté garlic and onion until fragrant.
  2. Add spices, then stir in beans, corn, chicken, chiles, broth, salsa, and rice. Bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes until rice is cooked.
  4. Top with cheese, cover, and let melt for 2-3 minutes.
  5. Garnish with cilantro, avocado, and red pepper flakes. Serve hot.

Feel free to customize toppings like sour cream or hot sauce for extra flavor.
