Salad Ingredients
  • 6 cups chopped romaine lettuce
  • 1 cup cooked black beans, rinsed and drained
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1/2 cup chopped red bell pepper
  • 1/2 cup chopped red onion
  • 1/2 cup crumbled queso fresco or cotija cheese
  • 1/4 cup chopped cilantro
  • 1 avocado, diced
  • Santa Fe Ranch Dressing (or your favorite southwest dressing)
  • Grilled chicken or steak, tortilla strips Optional

Method
 

  1. Combine lettuce, beans, corn, bell pepper, onion, cheese, and cilantro in a bowl.
  2. Add the diced avocado.
  3. Pour dressing over salad and toss gently.
  4. Add grilled chicken/steak and/or tortilla strips if desired.
  5. Serve immediately.

Notes

Adjust the amount of dressing to your liking. For a spicier kick, add a pinch of cayenne pepper or a dash of hot sauce.
