  • 6 cups chopped romaine lettuce
  • 15 ounce black beans rinsed and drained
  • 1 cup frozen corn thawed
  • 1 red bell pepper chopped
  • 1/2 cup chopped red onion
  • 1/2 cup chopped cilantro
Toppings
  • 1/4 cup pepitas (pumpkin seeds)
  • 1/4 cup crumbled cotija cheese optional
Dressing
  • Avocado slices optional
  • Santa Fe Salad Dressing store-bought or homemade

Method
 

  1. Combine lettuce, beans, corn, bell pepper, onion, and cilantro in a bowl.
  2. Add pepitas and cotija cheese (if using).
  3. Pour dressing over salad and toss gently.
  4. Top with avocado slices (if using).
  5. Serve immediately.

Notes

Adjust the amount of dressing to your liking. For a spicier kick, add a pinch of cayenne pepper to the salad.
