Ingredients
  

Chicken
  • 2 boneless skinless chicken breasts about 1 pound
  • 2 teaspoons chili powder
  • 2 teaspoons cumin
  • 1 tablespoon olive oil
Salad
  • 6 cups chopped romaine lettuce
  • 1 avocado diced
  • 1 cup canned corn drained
  • 1 cup diced roma tomatoes
  • cup chopped cilantro
  • Tortilla strips
Dressing
  • ½ cup mayonnaise
  • 1 tablespoon lime juice
  • 1 tablespoon water or more if needed
  • ½ teaspoon chili powder
  • ¼ teaspoon cumin
  • ½ teaspoon onion powder
  • to taste Salt & pepper

Method
 

  1. Slice chicken breasts horizontally to make 4 thin cutlets.
  2. Combine 2 tsp chili powder and 2 tsp cumin. Sprinkle over chicken.
  3. Heat olive oil in skillet. Cook chicken, covered, 5-6 minutes per side until cooked through.
  4. Let chicken rest, then slice into strips.
  5. Mix dressing ingredients in a bowl, adding water to thin if needed.
  6. Combine salad ingredients (except tortilla strips) in a bowl. Drizzle with dressing and toss.
  7. Top with tortilla strips and optional lime juice and pepper.

Notes

Adjust the amount of dressing to your preference. For a spicier kick, add a pinch of cayenne pepper to the dressing.
