Method
- Slice chicken breasts horizontally to make 4 thin cutlets.
- Combine 2 tsp chili powder and 2 tsp cumin. Sprinkle over chicken.
- Heat olive oil in skillet. Cook chicken, covered, 5-6 minutes per side until cooked through.
- Let chicken rest, then slice into strips.
- Mix dressing ingredients in a bowl, adding water to thin if needed.
- Combine salad ingredients (except tortilla strips) in a bowl. Drizzle with dressing and toss.
- Top with tortilla strips and optional lime juice and pepper.
Notes
Adjust the amount of dressing to your preference. For a spicier kick, add a pinch of cayenne pepper to the dressing.
