  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1/2 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 14.5 ounce diced tomatoes, undrained
  • 1/2 cup Kalamata olives, pitted and halved
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

  1. Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook until browned.
  2. Drain off any excess grease.
  3. Add onion and garlic to the skillet and cook until softened, about 5 minutes.
  4. Add bell peppers and cook for another 5 minutes, until slightly tender.
  5. Stir in diced tomatoes, olives, oregano, salt, and pepper. Simmer and cook for 10 minutes, stirring occasionally.
  6. Remove from heat and stir in lemon juice and parsley.
  7. Top with crumbled feta cheese before serving.

Notes

Serve over rice or quinoa for a complete meal.
