Method
- Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook until browned.
- Drain off any excess grease.
- Add onion and garlic to the skillet and cook until softened, about 5 minutes.
- Add bell peppers and cook for another 5 minutes, until slightly tender.
- Stir in diced tomatoes, olives, oregano, salt, and pepper. Simmer and cook for 10 minutes, stirring occasionally.
- Remove from heat and stir in lemon juice and parsley.
- Top with crumbled feta cheese before serving.
Notes
Serve over rice or quinoa for a complete meal.
