Ingredients

  • 2 cups cooked shredded chicken preferably cooked ahead
  • 8 oz egg noodles uncooked
  • 1 cup chopped carrots fresh or frozen
  • 1 cup chopped celery
  • 1.5 cups chicken broth
  • 1 cup shredded cheese cheddar or mozzarella
  • 2 tbsp butter
  • 2 tbsp flour
  • 1 tsp dried thyme
  • Salt and pepper to taste

Method
 

  1. Cook noodles according to package instructions, then drain and set aside.
  2. In a large skillet, melt butter over medium heat. Add flour and thyme, whisking to form a roux.
  3. Gradually whisk in chicken broth, cooking until mixture thickens.
  4. Stir in cooked chicken, carrots, celery, and half of the cheese. Season with salt and pepper.
  5. Combine the sauce with cooked noodles, transfer to a baking dish, top with remaining cheese, and bake at 375°F (190°C) for 20 minutes until bubbly and golden.

Notes

You can add peas or other vegetables for extra nutrition.
