Savory Crock Pot Mediterranean Chicken with Feta and Spinach Recipe

  • 1.5 lbs boneless, skinless chicken thighs or breasts
  • 14.5 ounce diced tomatoes, undrained
  • 15 ounce chickpeas, drained and rinsed
  • 0.5 cup Kalamata olives, pitted and halved
  • 0.25 cup sun-dried tomatoes, oil-packed, drained and chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 0.5 teaspoon dried basil
  • 0.25 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • 5 ounces fresh spinach, roughly chopped
  • 4 ounces feta cheese, crumbled

Method
 

  1. Place chicken in the bottom of a slow cooker.
  2. Combine tomatoes, chickpeas, olives, sun-dried tomatoes, garlic, oregano, basil, and red pepper flakes. Season with salt and pepper.
  3. Pour the tomato mixture over the chicken.
  4. Cook on low for 6-8 hours or on high for 3-4 hours, or until chicken is cooked through.
  5. Shred the chicken with two forks directly in the slow cooker.
  6. Stir in the spinach until wilted, about 5 minutes.
  7. Stir in half of the feta cheese. Top with the remaining feta cheese before serving.
  8. Serve over rice, quinoa, or pasta, if desired.

Notes

For a richer flavor, brown the chicken before adding it to the slow cooker.
