Method
- Preheat oven to 400F (200C).
- Toss diced potatoes with olive oil, oregano, thyme, garlic powder, salt, and black pepper.
- Spread on a baking sheet and roast for 25-30 minutes until golden and crispy.
- Cook ground beef in a skillet over medium heat, breaking it up and seasoning with salt and pepper until no longer pink.
- Steam broccoli florets for 2-3 minutes until bright green and tender-crisp.
- Arrange ground beef, roasted potatoes, and steamed broccoli on a plate and season with salt and pepper if needed.
Notes
For extra flavor, add a pinch of red pepper flakes to the potatoes before roasting.
