  • 1.5 lbs boneless, skinless chicken breasts cut into 1-inch pieces
  • 1 red bell pepper chopped
  • 1 yellow bell pepper chopped
  • 1 zucchini chopped
  • 1 red onion chopped
  • 1 cup cherry tomatoes halved
  • 1/4 cup Kalamata olives pitted and halved
  • 1/4 cup feta cheese crumbled
  • 2 cloves garlic minced
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes optional

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Combine chicken, bell peppers, zucchini, red onion, cherry tomatoes, olives, garlic, olive oil, lemon juice, oregano, basil, red pepper flakes (if using), salt, and pepper in a large bowl.
  3. Toss to coat evenly.
  4. Spread on a baking sheet in a single layer.
  5. Bake for 20-25 minutes, or until chicken is cooked and vegetables are tender.
  6. Remove from oven and sprinkle with feta cheese.
  7. Serve immediately.

Notes

For extra flavor, marinate the chicken for at least 30 minutes before cooking.
