Method
- Preheat oven to 400°F (200°C).
- Combine chicken, bell peppers, zucchini, red onion, cherry tomatoes, olives, garlic, olive oil, lemon juice, oregano, basil, red pepper flakes (if using), salt, and pepper in a large bowl.
- Toss to coat evenly.
- Spread on a baking sheet in a single layer.
- Bake for 20-25 minutes, or until chicken is cooked and vegetables are tender.
- Remove from oven and sprinkle with feta cheese.
- Serve immediately.
Notes
For extra flavor, marinate the chicken for at least 30 minutes before cooking.
