  • 2 large sweet potatoes, peeled and diced
  • 3 medium carrots, peeled and sliced
  • 1 piece onion, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • to taste salt and pepper
  • 2 tablespoons olive oil
  • for garnish fresh parsley

Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Sauté onion until translucent, then add garlic and cook briefly.
  3. Add sweet potatoes and carrots, then pour in vegetable broth.
  4. Simmer for 20-25 minutes until vegetables are tender, then blend until smooth.
  5. Season with cumin, coriander, salt, and pepper. Serve garnished with parsley.
