Ingredients
  

Vegetables
  • 2 medium sweet potatoes peeled and diced
  • 1 red bell pepper red bell pepper diced
  • 1 small onion diced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • to taste salt and pepper salt and pepper
  • for garnish fresh parsley fresh parsley chopped

Method
 

  1. Heat olive oil in a skillet over medium heat.
  2. Add sweet potatoes and cook for 10 minutes, stirring occasionally.
  3. Add onion and bell pepper; cook until tender, about 5-7 minutes.
  4. Sprinkle garlic powder, paprika, salt, and pepper; stir well.
  5. Cook for 2-3 minutes to meld flavors, then remove from heat.
  6. Garnish with chopped parsley before serving.

Notes

Feel free to add a fried egg on top for extra protein.
