  • 2 medium sweet potatoes, diced
  • 1 diced bell pepper
  • 1 small onion, diced
Seasonings
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 0.5 teaspoon garlic powder

Method
 

  1. Heat olive oil in a skillet over medium heat.
  2. Add sweet potatoes and cook 10 minutes, stirring occasionally.
  3. Add onion and bell pepper; cook 5-7 minutes until tender.
  4. Sprinkle paprika, garlic powder, salt, and pepper; stir to combine.
  5. If using eggs, make wells and crack eggs; cook until desired doneness.
