  • 2 medium sweet potatoes, peeled and diced
  • 1 small onion, diced
  • 1 red red bell pepper, diced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • to taste salt and pepper
  • 1 tablespoon fresh parsley, chopped for garnish

Method
 

  1. Heat olive oil in a skillet over medium heat.
  2. Add sweet potatoes and cook for 10 minutes, stirring occasionally.
  3. Add onion and bell pepper; cook until tender, about 5-7 minutes.
  4. Stir in garlic and paprika; cook for 1-2 minutes until fragrant.
  5. Season with salt and pepper; cook a few more minutes until crispy. Garnish with parsley before serving.

Notes

For extra flavor, add a dash of hot sauce or a squeeze of lemon before serving.
