Method
- Whisk eggs, milk/cream, salt, and pepper in a bowl.
- Heat olive oil in a non-stick pan over medium heat.
- Place tomato halves cut-side down in the pan and sear for 2-3 minutes, or until slightly softened and browned.
- Remove tomatoes from the pan and set aside.
- Pour egg mixture into the same pan.
- Cook, stirring gently, until eggs are set but still slightly moist.
- Remove from heat.
- Top scrambled eggs with sliced avocado and seared tomato halves.
- Optional: Sprinkle with red pepper flakes.
- Serve immediately.
Notes
For extra flavor, add a sprinkle of cheese or fresh herbs to the scrambled eggs.
