Ingredients
  

Eggs
  • 2 large eggs
  • 1 tablespoon milk or cream
  • to taste Salt and pepper
Toppings
  • 1/4 avocado sliced
  • 1 small tomato halved
  • 1 teaspoon olive oil
  • pinch red pepper flakes Optional

Method
 

  1. Whisk eggs, milk/cream, salt, and pepper in a bowl.
  2. Heat olive oil in a non-stick pan over medium heat.
  3. Place tomato halves cut-side down in the pan and sear for 2-3 minutes, or until slightly softened and browned.
  4. Remove tomatoes from the pan and set aside.
  5. Pour egg mixture into the same pan.
  6. Cook, stirring gently, until eggs are set but still slightly moist.
  7. Remove from heat.
  8. Top scrambled eggs with sliced avocado and seared tomato halves.
  9. Optional: Sprinkle with red pepper flakes.
  10. Serve immediately.

Notes

For extra flavor, add a sprinkle of cheese or fresh herbs to the scrambled eggs.
