Ingredients
  

Dry Ingredients
  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
Wet Ingredients
  • 3 ripe bananas mashed bananas about 1 1/2 cups mashed
  • 1/3 cup vegetable oil
  • 2 large eggs eggs
Flavorings
  • 1 teaspoon vanilla extract

Method
 

  1. Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the dry ingredients: flour, sugar, baking soda, and salt.
  3. In another bowl, mash bananas and mix in oil, eggs, and vanilla extract.
  4. Combine wet and dry ingredients until just mixed.
  5. Divide batter evenly into muffin cups and bake for 20 minutes or until golden and a toothpick comes out clean.
