Method
- Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together the dry ingredients: flour, sugar, baking soda, and salt.
- In another bowl, mash bananas and mix in oil, eggs, and vanilla extract.
- Combine wet and dry ingredients until just mixed.
- Divide batter evenly into muffin cups and bake for 20 minutes or until golden and a toothpick comes out clean.
Notes
For extra flavor, add a handful of chopped walnuts or chocolate chips.
