Method
- Season the scallops generously with salt and pepper.
- Heat olive oil and 2 tablespoons butter in a skillet over medium-high heat.
- Sear scallops for 2-3 minutes per side, until golden brown and cooked through. Do not overcrowd the pan.
- Remove scallops and set aside.
- Melt remaining 2 tablespoons butter in the same skillet over medium heat. Add garlic and cook for 30 seconds.
- Pour in white grape juice (if using) and lemon juice. Simmer for 1-2 minutes to reduce slightly.
- Return scallops to the skillet and toss to coat with the lemon butter sauce.
- Garnish with fresh parsley and serve immediately.
Notes
For best results, use fresh, high-quality sea scallops. Be careful not to overcook the scallops, as they can become tough.
